Sweet Potato Creations
INGREDIENTS
- sweet potatoe
PREPARATION
- 1Wash and dry the sweet potatoes. Drying is super important because we want the skin to crisp up during baking.
- 2Poke holes all over the sweet potato. I do 4 fork pricks up one side and 4 pricks on the other side.
- 3Wrap the sweet potato in tin foil. Bake at 400 degrees for around 40 minutes. #serveandenjoy

2 cups whole wheat flour
2 cups plain yogurt (I used @siggisdairy)
2 heaping Tbsp ground flax*

3/4 cup oats, blended in food processor
1.5 cups nuts and seeds (3/4 cup cashews, 1/4 cup walnuts, 1/4 cup pistachios, 1/4 cup pumpkin seeds)
Cauliflower gnocchi
1 package of cauliflower gnocchi
1/2 cup of cherry tomatoes, cut in half
