Superfood Stew

You must try this #robinbarrieapproved#superfoodstew for #turmerictuesday ! It’s made with chickpeas and a lot of veggies that are high in fiber. Parsley, #turmeric , onion and garlic have alll the #antioxidant #antibacterial and #antiinflammatory properties. It’s super easy to make, delicious and nutritious. Let me know what you think and tag me when you make it!! Serve over your favorite brown, jasmine, basmati or cauliflower rice.

Ingredients

  • 1 can of coconut milk
  • 1 cup of vegetable stock
  • 1 teaspoon of turmeric
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of coriander
  • 1 can of chick peas
  • 4–5 roasted carrots chopped
  • 1/3 cup of organic parsley

Instructions

  1. Add the coconut milk, vegetable stock and spice over medium heat. Bring to a boil then reduce to simmer.
  2. Add in carrots and chickpeas. Let the #superfood stew simmer for around 45 minutes until it reduces into a stew like consistency. Add parsley and salt/ pepper to taste.
  3. Roasted carrots. Toss with olive oil and salt and pepper. Put in oven at 375 degrees for around 45 minutes.
