Ingredients

- 1 can of coconut milk
- 1 cup of vegetable stock
- 1 teaspoon of turmeric
- 1/2 teaspoon of cumin
- 1/2 teaspoon of coriander
- 1 can of chick peas
- 4–5 roasted carrots chopped
- 1/3 cup of organic parsley
Instructions
- Add the coconut milk, vegetable stock and spice over medium heat. Bring to a boil then reduce to simmer.
- Add in carrots and chickpeas. Let the #superfood stew simmer for around 45 minutes until it reduces into a stew like consistency. Add parsley and salt/ pepper to taste.
- Roasted carrots. Toss with olive oil and salt and pepper. Put in oven at 375 degrees for around 45 minutes.
