Taco salad

INGREDIENTS

  1. Salad Ingredients:
  2. 1 medium head romaine lettuce
  3. 1 medium bell pepper
  4. 1/2 medium red onion (or use 1/3 cup pickled onions)
  5. 1 jalapeño, finely chopped
  6. 1/2 cup of corn
  7. 1/3 cup of crumbled cotija cheese
  8. Dressing Ingredients :
  9. 1/2 cup finely minced fresh cilantro leaves
  10. 1/2 cup of extra virgin olive oil
  11. 3 tablespoons freshly squeezed lime juice
  12. 1 tablespoon of apple cider vinegar
  13. 2 teaspoons of honey
  14. 1/2 teaspoon of oregano
  15. Freshly ground black pepper

PREPARATION

  1. 1Combine all ingredients and enjoy! Easy and delicious.
