- 1Add the coconut milk, vegetable stock and spice over medium heat. Bring to a boil then reduce to simmer.
- 2Add in carrots and chickpeas. Let the #superfood stew simmer for around 45 minutes until it reduces into a stew like consistency. Add parsley and salt/ pepper to taste.
- 3Roasted carrots. Toss with olive oil and salt and pepper. Put in oven at 375 degrees for around 45 minutes.
