Superfood Stew

INGREDIENTS

  1. 1 can of coconut milk
  2. 1 cup of vegetable stock
  3. 1 teaspoon of turmeric
  4. 1/2 teaspoon of cumin
  5. 1/2 teaspoon of coriander
  6. 1 can of chick peas
  7. 4-5 roasted carrots chopped
  8. 1/3 cup of organic parsley

PREPARATION

  1. 1Add the coconut milk, vegetable stock and spice over medium heat. Bring to a boil then reduce to simmer.
  2. 2Add in carrots and chickpeas. Let the #superfood stew simmer for around 45 minutes until it reduces into a stew like consistency. Add parsley and salt/ pepper to taste.
  3. 3Roasted carrots. Toss with olive oil and salt and pepper. Put in oven at 375 degrees for around 45 minutes.
