Dillicious Creamy Bean Salad
INGREDIENTS
- 2 cups cooked chickpeas or cannellini beans, drained and rinsed
- 2 tablespoons minced parsley
- 2 tablespoons minced fresh dill
- 2 scallions, minced
- 2 tablespoons lemon juice
- 2 tablespoons of Greek yogurt
- 1 tablespoon avocado mayo
- 1 tablespoon olive oil
- 1 avocado, diced
- 2 cups chopped cucumber and/or added veggies (I like celery, bell pepper and onion!)
- Salt and pepper, to taste
PREPARATION
- 1Mix it all up in a bowl and serve on top of your favorite greens, bread or cracker!!
- 2Makes about 4 servings, depending on how hungry you are!
Green Egg Salad
3 boiled egg whites
1/2 small avocado
salt and pepper to taste
squeeze of lemon juice
red chili flakes
Wine Spritzer
3 oz white wine (Sauvignon Blanc, Reisling, etc)
1 oz club soda
handful of ice
lemon or orange garnish
Turkey Chili
2 teaspoons olive oil
1 yellow onion, chopped
3 garlic cloves, minced
3 medium peppers, chopped
Lemon Spinach
2 tablespoons olive oil
6 cloves garlic sliced into thin slivers
1 pound baby spinach leaves
