Dillicious Creamy Bean Salad

INGREDIENTS

  1. 2 cups cooked chickpeas or cannellini beans, drained and rinsed
  2. 2 tablespoons minced parsley
  3. 2 tablespoons minced fresh dill
  4. 2 scallions, minced
  5. 2 tablespoons lemon juice
  6. 2 tablespoons of Greek yogurt
  7. 1 tablespoon avocado mayo
  8. 1 tablespoon olive oil
  9. 1 avocado, diced
  10. 2 cups chopped cucumber and/or added veggies (I like celery, bell pepper and onion!)
  11. Salt and pepper, to taste

PREPARATION

  1. 1Mix it all up in a bowl and serve on top of your favorite greens, bread or cracker!!
  2. 2Makes about 4 servings, depending on how hungry you are!
