Bean Salad with Balsamic Dressing
INGREDIENTS
- Dressing Ingredients
- 1/2 lemon juiced
- 1 tablespoon of Dijon mustard
- 2 tablespoons of balsamic glaze
- 3 tablespoons of balsamic vinegar
- 5 tablespoons of olive oil
- Himalayan salt to taste
- Bean salad ingredients
- 1 can of garbanzo beans
- 1 can of kidney beans
- 1/2 chopped onion
- 1 diced avocado
- 1/4 cup of chopped walnuts
- Balsamic dressing added as desired
PREPARATION
- 1Recipe Dressing
- 2Combine all ingredients in a bowl and whisk. Add salt to taste. Add a touch more balsamic glaze for a sweeter dressing.

- 4Combine all ingredients in a medium sized bowl. Mix in balsamic dressing. Enjoy!
Butternut Squash + Pomegranate Quinoa Stuffing
1 cup vegetable stock
1 cup quinoa
2 ounces olive oil
1 onion, chopped
6 stalks celery, diced

10-15 Brussels sprouts, cut in half
1/2 butternut squash, cubed
3 tablespoons of olive oil
Veggie packed wheat berry salad
1/2 cups hard wheat berries
3/4 cup chopped pecans
1/2 cup dried cranberries, chopped
